Description

A creamy, flavor-packed potato salad elevated with smoky bacon, Dijon mustard, and fresh herbs, perfect for any gathering.


Ingredients

  • ½ cup mayonnaise

Instructions

  1. Cook the potatoes: Place the cubed red potatoes into a large pot. Cover with cold water and bring to a boil. Cook for 10-15 minutes, until fork-tender. Drain and let cool.
  2. Prepare the dressing: In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, and apple cider vinegar until smooth.
  3. Combine the ingredients: Fold in the cooled potatoes, red onion, crumbled bacon, cheddar cheese, parsley, and dill pickles gently.
