- 1 lb chicken breast, diced
- 1 tbsp olive oil
- 1 bell pepper, diced
- 1 cup corn, frozen or fresh
- 1 can black beans, drained and rinsed
- 1 cup salsa
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the bell pepper, corn, black beans, salsa, chili powder, and cumin to the skillet; stir to combine.
- Cook for an additional 5 minutes, allowing the flavors to meld.
- Stir in the cooked pasta and mix well.
- Top with shredded cheese and cover until melted.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to add other vegetables like zucchini or spinach for extra nutrition.
- This dish can be made ahead of time and reheated for a quick meal.
