  • 1 tsp cumin
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Add the bell pepper, corn, black beans, salsa, chili powder, and cumin to the skillet; stir to combine.
  5. Cook for an additional 5 minutes, allowing the flavors to meld.
  6. Stir in the cooked pasta and mix well.
  7. Top with shredded cheese and cover until melted.
  8. Season with salt and pepper to taste before serving.
