Description

A luscious slow-cooked pork shoulder dish featuring tender pork immersed in a savory and sweet sauce balanced with caramelized pineapple, soy sauce, and ginger.


Ingredients

  • 2 lbs pork shoulder
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 tsp ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In your slow cooker, layer the pork shoulder, pineapple chunks, soy sauce, brown sugar, minced garlic, sliced onion, and ginger. Season with salt and pepper.
  2. Cover the slow cooker and set on low for 6-8 hours until the pork is tender and easily shredded.
  3. Carefully remove the pork and shred it into bite-sized pieces before returning it to the slow cooker and stirring with the sauce.
  4. Serve the pork over fluffy rice or use it as a filling for tacos, sandwiches, or bowls.
