- 1 cup pineapple chunks

Instructions
- In your slow cooker, layer the pork shoulder, pineapple chunks, soy sauce, brown sugar, minced garlic, sliced onion, and ginger. Season with salt and pepper.
- Cover the slow cooker and set on low for 6-8 hours until the pork is tender and easily shredded.
- Carefully remove the pork and shred it into bite-sized pieces before returning it to the slow cooker and stirring with the sauce.
- Serve the pork over fluffy rice or use it as a filling for tacos, sandwiches, or bowls.
