Description

A comforting dish of tender chicken thighs and fluffy rice infused with lemon and herbs, all made effortlessly in a slow cooker.


Ingredients

  • 4 chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon (juice and zest)
  • 2 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh herbs (for garnish, such as parsley)

Instructions

  1. Combine the chicken thighs, minced garlic, chopped onion, rice, chicken broth, lemon juice, lemon zest, basil, thyme, salt, and pepper in the slow cooker.
  2. Stir gently to ensure even distribution of flavors.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  4. Before serving, fluff the rice with a fork and sprinkle with fresh herbs for garnish.

Notes

Prep ingredients beforehand and consider using frozen chicken thighs directly in the slow cooker for convenience.
