Description

A comforting twist on shepherd’s pie featuring roasted potatoes filled with a hearty mixture of ground meat, vegetables, and creamy mashed potatoes.


Ingredients

  • 4 Large Baking Potatoes
  • 1 Pound Ground Beef or Lamb
  • 1 Cup Mixed Vegetables (Peas, Carrots, Corn)
  • 1 Onion, Chopped
  • 2 Cloves Garlic, Minced
  • 1 Teaspoon Worcestershire Sauce
  • Salt and Pepper to Taste
  • 2 Cups Mashed Potatoes
  • 1 Cup Shredded Cheese (Optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub and pierce the potatoes, then bake for 45-60 minutes until tender.
  3. In a skillet, sauté the onion and garlic in olive oil for 2-3 minutes.
  4. Add the ground beef or lamb, cooking until browned (5-7 minutes).
  5. Stir in the mixed vegetables and Worcestershire sauce, seasoning with salt and pepper. Cook until veggies are tender (3-5 minutes).
  6. Slice the baked potatoes in half lengthwise and scoop out some flesh.
  7. Mix the scooped potato with the meat and vegetable mixture until well blended.
  8. Spoon the filling back into the potato skins, then top with mashed potatoes and cheese if desired.
  9. Bake again for 15-20 minutes until tops are golden.
  10. Serve hot and enjoy!
