- 4 Large Baking Potatoes
- 1 Pound Ground Beef or Lamb
- 1 Cup Mixed Vegetables (Peas, Carrots, Corn)
- 1 Onion, Chopped
- 2 Cloves Garlic, Minced
- 1 Teaspoon Worcestershire Sauce
- Salt and Pepper to Taste
- 2 Cups Mashed Potatoes
- 1 Cup Shredded Cheese (Optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub and pierce the potatoes, then bake for 45-60 minutes until tender.
- In a skillet, sauté the onion and garlic in olive oil for 2-3 minutes.
- Add the ground beef or lamb, cooking until browned (5-7 minutes).
- Stir in the mixed vegetables and Worcestershire sauce, seasoning with salt and pepper. Cook until veggies are tender (3-5 minutes).
- Slice the baked potatoes in half lengthwise and scoop out some flesh.
- Mix the scooped potato with the meat and vegetable mixture until well blended.
- Spoon the filling back into the potato skins, then top with mashed potatoes and cheese if desired.
- Bake again for 15-20 minutes until tops are golden.
- Serve hot and enjoy!
