Description

A delicious and healthy salad featuring roasted beets and figs, perfect for a light meal or side dish.


Ingredients

  • 4 medium beets, roasted and sliced
  • 6 fresh figs, quartered
  • 4 cups mixed greens
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 3 tablespoons balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the beets in aluminum foil and roast for about 45-60 minutes until tender.
  3. Let the beets cool, then peel and slice them.
  4. In a large bowl, combine the mixed greens, roasted beets, figs, goat cheese, and walnuts.
  5. Drizzle with balsamic vinaigrette and toss gently to combine.
  6. Season with salt and pepper to taste.
  7. Serve immediately and enjoy!
