- 1 cup heavy cream
- 1/2 cup pistachio paste
- 1/4 cup granulated sugar
- 2 large egg whites
- 1/2 teaspoon vanilla extract
- 1 cup dark chocolate, chopped
- 1/2 cup heavy cream (for ganache)
- 1 tablespoon butter
Instructions
- In a large bowl, whip the heavy cream until soft peaks form.
- In another bowl, combine the pistachio paste, granulated sugar, and vanilla extract. Mix until smooth.
- Carefully fold the pistachio mixture into the whipped cream.
- In a clean bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the pistachio mixture.
- Spoon the mousse into individual cups and refrigerate for at least 2 hours to set.
- Heat the 1/2 cup heavy cream in a small saucepan until just boiling. Pour it over the chopped chocolate and let it sit for a minute.
- Stir in the butter until smooth to create the ganache.
- Once the mousse has set, pour the ganache over each cup and chill for an additional hour.
