- 12 large mushrooms

Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms and remove the stems.
- In a bowl, mix together goat cheese, chopped pistachios, minced garlic, parsley, salt, and pepper.
- Stuff each mushroom cap with the pistachio and goat cheese mixture.
- Place the stuffed mushrooms on a baking sheet and drizzle with olive oil.
