Description

Ingredients

  • 2 chicken breasts, cubed
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Soy sauce to taste
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onions, garlic, and bell pepper; sauté until softened, about 3-5 minutes.
  3. Toss in cubed chicken, seasoning with salt and pepper; cook until browned, about 6-7 minutes.
  4. Fold in pineapple chunks and rice.
