- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- ½ cup champagne
- ½ cup peach purée
- 1 ½ teaspoons baking powder

- ½ teaspoon vanilla extract
- 1 cup butter, softened (for frosting)
- 3 cups powdered sugar
- 2 tablespoons peach purée (for frosting)
- Fresh peach slices for garnish
- Sparking sugar for decoration
Instructions
- Preheat the oven to 350°F (175°C). Line a cupcake tin with paper liners.
- Cream the butter and sugar in a large bowl until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, ensuring each is well blended before adding the next.
- Stir in the peach purée and champagne.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
- Spoon the batter into the cupcake liners, filling them about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean. Let them cool completely.
- Beat the softened butter until creamy for the frosting. Gradually add powdered sugar and peach purée until smooth.
- Frost the cooled cupcakes, then garnish with a fresh peach slice and sparkling sugar.
Notes
For a make-ahead option, bake the cupcakes the day before and frost them just before serving. You can use Prosecco instead of champagne or swap peaches with other fruits for different flavors.
