Description

A comforting one-pot meal featuring marinated chicken and fluffy rice infused with vibrant spices, perfect for family dinners or gatherings.


Ingredients

  • 1 lb chicken thighs or breasts, cut into bite-sized pieces
  • 2 cups long-grain rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Cook the chopped onion and minced garlic until translucent and fragrant.
  2. Stir in the chicken pieces and sauté until golden brown on all sides.
  3. Sprinkle in the spices (ground cumin, ground coriander, smoked paprika, turmeric) and season with salt and pepper. Stir well.
  4. Toss in the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
  5. While the rice is cooking, mix yogurt with lemon juice and a pinch of salt in a small bowl.
  6. After cooking, fluff the rice gently and serve hot, drizzled with yogurt sauce and garnished with parsley.

Notes

Marinate chicken overnight for enhanced flavors. Customize by adding vegetables or using dairy alternatives.
