- 1 lb chicken thighs or breasts, cut into bite-sized pieces
- 2 cups long-grain rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon smoked paprika
- 1 teaspoon turmeric
- Salt and pepper to taste
- 4 cups chicken broth
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Cook the chopped onion and minced garlic until translucent and fragrant.
- Stir in the chicken pieces and sauté until golden brown on all sides.
- Sprinkle in the spices (ground cumin, ground coriander, smoked paprika, turmeric) and season with salt and pepper. Stir well.
- Toss in the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
- While the rice is cooking, mix yogurt with lemon juice and a pinch of salt in a small bowl.
- After cooking, fluff the rice gently and serve hot, drizzled with yogurt sauce and garnished with parsley.
Notes
