Instructions
- In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour the melted butter into the mix and stir until the mixture resembles wet sand.
- Firmly press the crumb mixture into the bottom of a 9-inch square baking dish.
- In a large mixing bowl, beat the softened cream cheese with a mixer until smooth and creamy.
- Gradually add the powdered sugar, heavy cream, vanilla extract, and pink food coloring. Mix until fluffy.
- Spread the cheesecake filling evenly over the crust with a spatula.
- Refrigerate for at least 4 hours or until set.
- Dollop whipped cream on top and sprinkle with colorful sprinkles. Cut into bite-sized squares and serve.
