Ingredients

- 2 cups fresh blueberries
- 1/4 cup chia seeds
- 1/2 cup almond milk (or any milk of choice)
- 1/4 cup honey (or maple syrup)
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- Pinch of salt
Instructions
- Blend the blueberries, almond milk, honey, vanilla extract, and chia seeds in a blender until smooth.
- Pour the mixture into a bowl and let sit for about 10 minutes to thicken.
- In a separate bowl, mix graham cracker crumbs, melted butter, and salt until it resembles wet sand. Press into the pie dish.
- Once the blueberry mixture has thickened, pour it over the crust and spread evenly.
- Refrigerate for at least 2 hours until set.
- Slice and serve chilled.
Notes
Make ahead for best results. This dessert is also great when served with whipped cream or Greek yogurt.
