Description

A vibrant and creamy pie made with fresh blueberries and chia seeds, all on a crunchy graham cracker crust, perfect for summer gatherings.


Ingredients

  • 2 cups fresh blueberries
  • 1/4 cup chia seeds
  • 1/2 cup almond milk (or any milk of choice)
  • 1/4 cup honey (or maple syrup)
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • Pinch of salt

Instructions

  1. Blend the blueberries, almond milk, honey, vanilla extract, and chia seeds in a blender until smooth.
  2. Pour the mixture into a bowl and let sit for about 10 minutes to thicken.
  3. In a separate bowl, mix graham cracker crumbs, melted butter, and salt until it resembles wet sand. Press into the pie dish.
  4. Once the blueberry mixture has thickened, pour it over the crust and spread evenly.
  5. Refrigerate for at least 2 hours until set.
  6. Slice and serve chilled.

Notes

Make ahead for best results. This dessert is also great when served with whipped cream or Greek yogurt.
