Delicious and easy-to-make no bake berry cheesecake bars that are perfect for any occasion.
Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup heavy whipping cream
Instructions
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a lined baking dish.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Gently fold in the mixed berries.
- Spread the cheesecake mixture over the crust and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Cut into bars and serve chilled.
Notes
- For a firmer texture, refrigerate overnight.
- Feel free to use any combination of berries you prefer.
- Store leftovers in an airtight container in the refrigerator.
