Description

Delightfully crispy and flavor-packed Mexican Potatoes that redefine comfort food, perfect for any occasion.

Ingredients

Scale
  • 6 medium potatoes (Yukon Gold or Russet)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the potatoes and cut them into small, even cubes.
  3. Transfer the potato cubes into a large mixing bowl and pour in the olive oil, sprinkling the salt, black pepper, paprika, garlic powder, onion powder, chili powder, cumin, oregano, and parsley.
  4. Using your hands or a spatula, gently toss the potatoes until coated.
  5. Arrange the seasoned potatoes in a single layer on a baking sheet.
  6. Bake for 30–35 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve hot as a side dish or snack.

Notes

For crispy potatoes, ensure they are spread out in a single layer on the baking sheet. The dish can also be made in an air fryer at 390°F (200°C) for 20–25 minutes for a quicker option.
