- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine mozzarella cheese, feta cheese, chopped spinach, tomato, red onion, and black pepper. Mix well.
- Lay one tortilla flat and spoon one-fourth of the filling onto one half.
- Fold the tortilla over the filling to create a half-moon shape.
- Heat a non-stick skillet over medium heat and add olive oil.
- Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden.
- Flip the quesadilla and cook for an additional 3-4 minutes until crispy.
- Remove from skillet, slice into wedges, and serve warm.
Notes
For extra crispiness, sprinkle cheese in the skillet before adding the filled tortilla.
