Description

Delicious Mediterranean Quesadillas filled with spinach, feta, mozzarella, and red onion, offering a delightful blend of flavors.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine mozzarella cheese, feta cheese, chopped spinach, tomato, red onion, and black pepper. Mix well.
  2. Lay one tortilla flat and spoon one-fourth of the filling onto one half.
  3. Fold the tortilla over the filling to create a half-moon shape.
  4. Heat a non-stick skillet over medium heat and add olive oil.
  5. Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden.
  6. Flip the quesadilla and cook for an additional 3-4 minutes until crispy.
  7. Remove from skillet, slice into wedges, and serve warm.

Notes

For extra crispiness, sprinkle cheese in the skillet before adding the filled tortilla.
