  • 500g mascarpone cheese
  • 300ml heavy cream
  • 100g sugar
  • 1 cup brewed coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • Cocoa powder for dusting

Instructions

  1. In a bowl, whip the heavy cream and sugar until soft peaks form.
  2. In another bowl, mix the mascarpone cheese until smooth.
  3. Gently fold the whipped cream into the mascarpone cheese until well combined.
  4. In a shallow dish, combine the brewed coffee and coffee liqueur.
  5. Dip each Lotus Biscoff cookie into the coffee mixture briefly, then layer them in a serving dish.
  6. Spread a layer of the mascarpone mixture over the cookies.
  7. Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
  8. Cover and refrigerate for at least 4 hours, preferably overnight.
  9. Before serving, dust the top with cocoa powder.
