Description

Decadent Lemon Cheesecake Crumb Bars with a buttery graham cracker crust and a creamy, tangy lemon-infused filling.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 2 eggs
  • 1 cup sour cream
  • 2 tablespoons lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9×9-inch baking dish.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until well combined.
  3. Firmly press the crust mixture into the bottom of the prepared baking dish.
  4. In a larger bowl, beat softened cream cheese and powdered sugar together until smooth.
  5. Add eggs one at a time, mixing thoroughly after each addition.
  6. Fold in sour cream, lemon juice, and lemon zest until well combined.
  7. Pour the cheesecake mixture over the graham cracker crust.
  8. Bake for 30-35 minutes, until set and lightly golden on top.
  9. Allow to cool for at least two hours in the refrigerator, then cut into bars and enjoy.

Notes

For best flavor, prepare a day in advance. Can be made gluten-free with suitable substitutes.
