- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 2 eggs
- 1 cup sour cream
- 2 tablespoons lemon juice
- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C) and grease your 9×9-inch baking dish.
- In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until well combined.
- Firmly press the crust mixture into the bottom of the prepared baking dish.
- In a larger bowl, beat softened cream cheese and powdered sugar together until smooth.
- Add eggs one at a time, mixing thoroughly after each addition.
- Fold in sour cream, lemon juice, and lemon zest until well combined.
- Pour the cheesecake mixture over the graham cracker crust.
- Bake for 30-35 minutes, until set and lightly golden on top.
- Allow to cool for at least two hours in the refrigerator, then cut into bars and enjoy.
Notes
For best flavor, prepare a day in advance. Can be made gluten-free with suitable substitutes.
