A refreshing no-bake dessert that layers creamy lemon pudding, fresh blueberries, and crunchy graham crackers, perfect for summer gatherings.

- 1 package of lemon-flavored instant pudding mix
- 2 cups milk
- 1 container (8 oz) whipped topping
- 1 package of graham crackers
- 1 cup fresh blueberries
- 1 cup lemon curd (optional)
- Additional blueberries for garnish
Instructions
- In a mixing bowl, whisk together the lemon pudding mix and milk until smooth. Let it sit for about 5 minutes to thicken.
- Gently fold in the whipped topping until fully combined.
- In a clean 9×13 inch dish, layer half of the graham crackers on the bottom.
- Spread half of the lemon pudding mixture over the graham crackers.
- Scatter a layer of blueberries on top of the pudding.
- Repeat with the remaining graham crackers, lemon pudding mixture, and finish with more blueberries. Optionally, spread lemon curd in this layer.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with additional blueberries before serving.
Notes
Can be made ahead of time; flavors improve when allowed to rest in the fridge overnight.
