Description

A delicious and hearty layered Mediterranean vegetable lasagna that is packed with flavor and healthy ingredients.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, mix ricotta cheese, spinach, oregano, basil, salt, and pepper.
  4. In a baking dish, spread a layer of marinara sauce on the bottom.
  5. Layer 3 lasagna noodles over the sauce.
  6. Spread half of the ricotta mixture over the noodles.
  7. Add a layer of zucchini, bell pepper, and mushrooms.
  8. Sprinkle with mozzarella cheese.
  9. Repeat the layers, finishing with noodles and marinara sauce on top.
  10. Sprinkle Parmesan cheese over the final layer.
  11. Cover with foil and bake for 30 minutes.
  12. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  13. Let it cool for 10 minutes before serving.

Notes

  • Feel free to add other vegetables like eggplant or carrots.
  • For a gluten-free version, use gluten-free lasagna noodles.
  • This dish can be made ahead of time and stored in the refrigerator.
