Description

A creamy and crunchy chicken salad infused with smoky bacon and zesty jalapeños, perfect for any occasion.


Ingredients

  • 4 jalapeños, diced
  • 6 slices bacon, cooked & crumbled
  • 1 cup Greek yogurt (or light mayo)
  • 2 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. Cook & shred chicken: Use rotisserie chicken or poach chicken breasts until tender. Shred while warm.
  2. Prep jalapeños: Dice fresh, roasted, or pickled jalapeños finely, adjusting to your spice level.
  3. Make dressing: In a large bowl, whisk together Greek yogurt, softened cream cheese, garlic powder, paprika, salt, and pepper until smooth.
  4. Add mix-ins: Fold in shredded chicken, crumbled bacon, cheddar cheese, and diced jalapeños until well coated.
  5. Chill & serve: Cover and refrigerate for about 30 minutes. Garnish with fresh herbs before serving.
