Description

A sophisticated yet comforting dish featuring tender chicken filled with a creamy, herb-infused ricotta mixture.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh herbs (basil, parsley, or thyme), chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Fresh vegetables (for serving, optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine ricotta cheese, Parmesan cheese, herbs, garlic, salt, and pepper. Stir until rich and creamy.
  3. Pound each chicken breast to an even thickness of about 1/2 inch using plastic wrap and a meat mallet.
  4. Spread the ricotta mixture evenly onto each chicken breast, leaving a small border around the edges.
  5. Roll each chicken breast tightly and secure with toothpicks if necessary.
  6. Heat olive oil in a skillet over medium-high heat and sear the chicken rolls on all sides until golden brown, approximately 3-4 minutes per side.
  7. Transfer the browned chicken rolls to a baking dish and bake for 25-30 minutes or until they reach an internal temperature of 165°F (75°C).
  8. Let the rolls rest for a few minutes before slicing and serve warm, optionally with fresh vegetables.

Notes

Make-ahead: Prepare the ricotta filling a day in advance. Try alternate cooking methods like air frying or grilling for different flavors.
