Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups mixed vegetables (bell peppers, zucchini, red onion)
  • 1 lemon (juiced)
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Combine the chicken breasts, mixed vegetables, lemon juice, olive oil, oregano, thyme, salt, and pepper in a mixing bowl.
  3. Lay out aluminum foil sheets, about 12×12 inches large.
  4. Place an equal amount of the chicken and vegetable mixture in the center of each sheet.
  5. Fold the foil over to create sealed packets, ensuring there are no cracks.
  6. Grill or bake for 25-30 minutes until chicken is cooked through and veggies are tender.
  7. Carefully open the packets, being cautious of hot steam. Sprinkle with fresh parsley before serving.
