Description

A vibrant bowl featuring savory ground beef, caramelized sweet potatoes, creamy cottage cheese, and slices of avocado, drizzled with hot honey for a delightful sweet and spicy kick.


Ingredients

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. In a mixing bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper.
  3. Spread the seasoned sweet potatoes on a baking sheet in a single layer and roast for 40–45 minutes, flipping halfway through.
  4. While the sweet potatoes roast, heat the remaining olive oil in a skillet over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
  5. Add the ground beef and taco seasoning to the pan, cooking until browned, breaking it apart as it cooks.
  6. Assemble your bowls by starting with a layer of roasted sweet potatoes, then the seasoned beef, followed by avocado slices and a scoop of cottage cheese.
  7. Drizzle hot honey over each bowl before serving.

Notes

Make-ahead tips: You can roast the sweet potatoes and cook the beef a day in advance. Store components separately in the refrigerator.
