- 1 lb lean ground beef (93% preferred)
- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese (low-fat or full-fat)
- 1 yellow onion, diced
- 2 tbsp olive oil
- 1 taco seasoning packet (or 2 tbsp homemade)
- 2 tbsp hot honey
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- In a mixing bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper.
- Spread the seasoned sweet potatoes on a baking sheet in a single layer and roast for 40–45 minutes, flipping halfway through.
- While the sweet potatoes roast, heat the remaining olive oil in a skillet over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
- Add the ground beef and taco seasoning to the pan, cooking until browned, breaking it apart as it cooks.
- Assemble your bowls by starting with a layer of roasted sweet potatoes, then the seasoned beef, followed by avocado slices and a scoop of cottage cheese.
- Drizzle hot honey over each bowl before serving.

Make-ahead tips: You can roast the sweet potatoes and cook the beef a day in advance. Store components separately in the refrigerator.
