Description

A delicious and healthy dish featuring tender beef rolls filled with ginger, carrots, cranberries, and walnuts.


Ingredients

  • 1 lb beef flank steak
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup dried cranberries
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the beef flank steak into thin strips.
  3. In a bowl, mix grated carrots, chopped walnuts, dried cranberries, and grated ginger.
  4. Lay a strip of beef on a flat surface, place a spoonful of the filling at one end, and roll it up tightly.
  5. Secure the roll with a toothpick if necessary.
  6. Heat olive oil in a skillet over medium heat and sear the beef rolls on all sides until browned.
  7. Transfer the rolls to a baking dish, drizzle with soy sauce, and season with salt and pepper.
  8. Bake in the preheated oven for 20-25 minutes or until the beef is cooked through.
  9. Remove from the oven, let cool slightly, and serve warm.

Notes

  • For a spicier kick, add some red pepper flakes to the filling.
  • These rolls can be made ahead of time and reheated before serving.
  • Serve with a side of steamed vegetables for a complete meal.
