- 1 lb beef flank steak
- 1 cup grated carrots
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
- 2 tablespoons fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the beef flank steak into thin strips.
- In a bowl, mix grated carrots, chopped walnuts, dried cranberries, and grated ginger.
- Lay a strip of beef on a flat surface, place a spoonful of the filling at one end, and roll it up tightly.
- Secure the roll with a toothpick if necessary.
- Heat olive oil in a skillet over medium heat and sear the beef rolls on all sides until browned.
- Transfer the rolls to a baking dish, drizzle with soy sauce, and season with salt and pepper.
- Bake in the preheated oven for 20-25 minutes or until the beef is cooked through.
- Remove from the oven, let cool slightly, and serve warm.
Notes
- For a spicier kick, add some red pepper flakes to the filling.
- These rolls can be made ahead of time and reheated before serving.
- Serve with a side of steamed vegetables for a complete meal.
