Description

A vibrant chicken bowl featuring succulent grilled chicken, fresh vegetables, and creamy feta, inspired by Mediterranean flavors.


Ingredients

  • 2 chicken breasts, diced
  • 1 cup cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine diced chicken with olive oil, lemon juice, oregano, salt, and pepper. Toss to coat evenly.
  2. Heat a skillet over medium heat and add the marinated chicken. Cook for about 5-7 minutes, or until browned and fully cooked.
  3. In a separate bowl, combine the cooked rice, halved cherry tomatoes, diced cucumber, finely chopped red onion, and sliced olives. Toss gently.
  4. Fold the cooked chicken into the rice and vegetable mixture until evenly distributed.
  5. Top with crumbled feta cheese and add additional salt and pepper if desired.
  6. Serve warm or store in meal prep containers for later use.

Notes

You can marinate the chicken a few hours (or overnight) for deeper flavors. Consider using an air fryer or roasting for alternative cooking methods.
