- 2 chicken breasts, diced
- 1 cup cooked rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/2 cup kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine diced chicken with olive oil, lemon juice, oregano, salt, and pepper. Toss to coat evenly.
- Heat a skillet over medium heat and add the marinated chicken. Cook for about 5-7 minutes, or until browned and fully cooked.
- In a separate bowl, combine the cooked rice, halved cherry tomatoes, diced cucumber, finely chopped red onion, and sliced olives. Toss gently.
- Fold the cooked chicken into the rice and vegetable mixture until evenly distributed.
- Top with crumbled feta cheese and add additional salt and pepper if desired.
- Serve warm or store in meal prep containers for later use.
Notes
You can marinate the chicken a few hours (or overnight) for deeper flavors. Consider using an air fryer or roasting for alternative cooking methods.
