Description

A vibrant medley of shredded chicken, corn, cherry tomatoes, avocado, black beans, and rice or quinoa, delivering flavor and nutrition in every bite.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can corn, drained
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1 cup cooked rice or quinoa
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked chicken, corn, halved cherry tomatoes, diced avocado, rice (or quinoa), black beans, and chopped cilantro.
  2. Drizzle the mixture with fresh lime juice and season generously with salt and pepper to taste.
  3. Toss all the ingredients together gently, taking care not to mash the avocado.
