- 1 avocado, diced
- 1 cup cooked rice or quinoa

- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the cooked chicken, corn, halved cherry tomatoes, diced avocado, rice (or quinoa), black beans, and chopped cilantro.
- Drizzle the mixture with fresh lime juice and season generously with salt and pepper to taste.
- Toss all the ingredients together gently, taking care not to mash the avocado.
- Serve immediately or store it in the refrigerator for meal prep.
Notes
