A comforting and flavorful dish with tender chicken, fluffy rice, and creamy tzatziki, perfect for weeknight dinners.

- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill (Fresh preferred)
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (Diced zucchini or bell pepper)
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the rice under cold water until the water runs clear.
- In a baking dish, combine rinsed rice and chicken broth. Mix in half of the salt and black pepper.
- Arrange chicken breasts on top, drizzling with olive oil and sprinkling with remaining salt and pepper.
- Prepare tzatziki by mixing Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and paprika in a bowl.
- Once chicken is done, let it rest, then serve with tzatziki on top of the rice.
<li cover with foil and bake for 35-40 minutes until chicken is cooked through.
Notes
You can make the tzatziki a day ahead for deeper flavors. Adjust cooking times if using brown rice instead of white.
