- 1 cup ripe tomatoes (diced)
- 1 cup heavy cream
- 4 cloves fresh garlic (minced)
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil (chopped)
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot and cook pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until golden brown, about 1-2 minutes.
- Add diced tomatoes, season with salt and pepper, and simmer for about 5 minutes until tomatoes soften.
- Lower the heat, stir in heavy cream, and simmer gently for another 2-3 minutes.
- Add cooked pasta to the skillet and toss to combine with the sauce. Adjust consistency with reserved pasta water if needed.
- Serve pasta garnished with fresh basil and grated Parmesan cheese if desired.
Notes
You can make the sauce in advance and store it in the refrigerator. This dish pairs well with garlic bread, Caesar salad, or grilled vegetables.
