- 8 oz penne or fettuccine pasta
- 4 cloves fresh garlic, minced
- 1 can (14.5 oz) diced tomatoes (no added sugar)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, about 8-10 minutes.
- Sauté the Garlic: In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant and golden brown, about 2 minutes.
- Add Tomatoes: Pour in the diced tomatoes along with their juices and simmer for 5 minutes.
- Stir in the Cream: Lower the heat and gently stir in the heavy cream, letting it bubble for 2 minutes.
- Finish with Cheese: Mix in the grated Parmesan until melted smoothly into the sauce. Season with salt and pepper.
- Combine with Pasta: Drain the pasta, reserving 1/2 cup of the cooking water. Toss the pasta into the sauce, adding reserved water until desired consistency.
- Serve: Dish up the pasta hot, garnishing with extra Parmesan if desired.
Notes
For a lighter version, consider using half-and-half or coconut cream. You can customize with sautéed veggies or different pasta.
