Description

A delightful and comforting dish featuring creamy sauce, fresh garlic, and ripe tomatoes, perfectly paired with pasta.


Ingredients

  • 8 oz penne or fettuccine pasta
  • 4 cloves fresh garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no added sugar)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, about 8-10 minutes.
  2. Sauté the Garlic: In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant and golden brown, about 2 minutes.
  3. Add Tomatoes: Pour in the diced tomatoes along with their juices and simmer for 5 minutes.
  4. Stir in the Cream: Lower the heat and gently stir in the heavy cream, letting it bubble for 2 minutes.
  5. Finish with Cheese: Mix in the grated Parmesan until melted smoothly into the sauce. Season with salt and pepper.
  6. Combine with Pasta: Drain the pasta, reserving 1/2 cup of the cooking water. Toss the pasta into the sauce, adding reserved water until desired consistency.
  7. Serve: Dish up the pasta hot, garnishing with extra Parmesan if desired.

Notes

For a lighter version, consider using half-and-half or coconut cream. You can customize with sautéed veggies or different pasta.
