A refreshing summer salad combining sweet corn, crisp cucumbers, juicy cherry tomatoes, and a creamy dressing, perfect for picnics and barbecues.

- 2 cups fresh corn kernels (or canned corn)
- 1 medium cucumber (preferably English)
- 1 cup cherry tomatoes (or grape tomatoes)
- 1/2 medium red onion (or green onions)
- 1 cup crumbled feta cheese (or goat cheese)
- 1/4 cup cilantro (optional)
- 1/3 cup mayonnaise (or Greek yogurt)
- 1/3 cup sour cream (or Greek yogurt)
- 2 tablespoons lime juice (or lemon juice)
- 1 teaspoon chili powder (to taste)
- Salt and pepper (to taste)
Instructions
- Cook the corn: If using fresh corn, boil in salted water for 3-5 minutes; drain and cool. If using canned corn, drain and rinse.
- Chop the vegetables: Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
- Make the dressing: Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
- Combine all ingredients in a large bowl: Add cooled corn, chopped cucumber, tomatoes, onion, and feta. Pour dressing over and mix gently.
- Chill and serve: Refrigerate for at least 30 minutes before serving. Serve chilled, garnished with cilantro if desired.
Notes
This salad gets better the longer it sits. Consider making it a day ahead for enhanced flavor.
