- 4 Salmon Fillets, skin-on
- 2 Tablespoons Olive Oil
- 2 Cloves Garlic, Minced
- 1 Cup Heavy Cream
- 1/2 Cup Sun-Dried Tomatoes, Chopped
- 1/2 Cup Grated Parmesan Cheese
- Salt and Pepper to Taste
- Fresh Parsley, for Garnish
Instructions
- Heat the olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper, then place them skin-side down in the skillet. Sear for 4-5 minutes until golden. Turn and cook for another 4-5 minutes until cooked through. Remove and set aside.
- In the same skillet, sauté minced garlic for about 1 minute. Add heavy cream and simmer until slightly thickened.
- Stir in chopped sun-dried tomatoes and gradually add Parmesan cheese, mixing until smooth.
- Return the salmon to the skillet, spoon sauce over, and simmer for an additional 2 minutes.
- Garnish with fresh parsley and serve immediately.
Notes
Pat the salmon dry for a better sear. Consider marinating ahead of time for enhanced flavor.
