Description

Delicious chocolate peanut butter muffins that are rich, moist, and infused with creamy peanut butter.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Combine the granulated sugar, brown sugar, and peanut butter in another bowl until creamy.
  4. Add the eggs, milk, vegetable oil, and vanilla extract to the peanut butter mixture and stir until smooth.
  5. Fold in the dry ingredients to the wet mixture until just combined.
  6. Scoop the batter into the muffin cups until 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool in the muffin tin for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days or freeze for up to three months.
