Description

Buffalo Chicken Zucchini Boats are a delicious and healthy dish that combines the flavors of buffalo chicken with tender zucchini, making for a perfect low-carb meal.


Ingredients

  • 4 medium zucchinis
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. In a bowl, mix the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese.
  4. Season the mixture with salt and pepper.
  5. Fill each zucchini boat with the buffalo chicken mixture.
  6. Top with the remaining cheddar cheese and chopped green onions.
  7. Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender.
  8. Serve hot and enjoy!
