Description

A vibrant dish featuring tender chicken cooked in creamy coconut milk, infused with spices and colorful bell peppers for a delightful culinary experience.


Ingredients

  • 1 lb skinless, boneless chicken thighs or breasts
  • 1 cup coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 bell peppers, sliced
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Lime wedges for garnish
  • Cilantro for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion, garlic, and ginger, sauté until fragrant.
  3. Add chicken pieces, cooking until golden brown on all sides.
  4. Stir in sliced bell peppers, cumin, coriander, salt, and pepper; mix well.
  5. Pour in coconut milk and bring to a gentle simmer.
  6. Cover the pan and cook for 20-25 minutes, until chicken is cooked through.
  7. Serve hot, garnished with lime wedges and cilantro.
