- 1 pound breakfast sausage
- 2 cups pancake mix
- 1 1/2 cups milk
- 3 large eggs
- 1 cup fresh blueberries
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the breakfast sausage over medium heat until browned and cooked through. Drain excess fat.
- In a large bowl, mix the pancake mix, milk, eggs, maple syrup, vanilla extract, and cinnamon until just combined.
- Fold in the cooked sausage and blueberries gently.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Let it cool for a few minutes before serving.
Notes
- For a sweeter dish, add more maple syrup to the batter.
- Can substitute blueberries with other berries if desired.
- Serve with additional maple syrup on the side.
