Ingredients

  • 1 pound breakfast sausage
  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 3 large eggs
  • 1 cup fresh blueberries
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned and cooked through. Drain excess fat.
  3. In a large bowl, mix the pancake mix, milk, eggs, maple syrup, vanilla extract, and cinnamon until just combined.
  4. Fold in the cooked sausage and blueberries gently.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  7. Let it cool for a few minutes before serving.

Notes

  • For a sweeter dish, add more maple syrup to the batter.
