- 2 cups cottage cheese
- 1 cup rolled oats
- 1 cup fresh blueberries
- 1/2 cup sliced almonds
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine cottage cheese, oats, blueberries, and sliced almonds.
- In another bowl, whisk together honey, eggs, vanilla extract, baking powder, cinnamon, and salt.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Transfer the mixture to a greased baking dish.
- Bake for 30-35 minutes or until the top is golden brown and set.
- Let it cool for a few minutes before serving.
