Asiago Roasted Onions are a delicious and flavorful side dish that combines the sweetness of roasted onions with the rich, nutty flavor of Asiago cheese.

- 4 large onions, sliced
- 1 cup Asiago cheese, grated
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced onions with olive oil, salt, pepper, and thyme.
- Spread the onions evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the onions are golden brown and tender.
- Remove from the oven and sprinkle the grated Asiago cheese over the top.
- Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
- Serve warm as a side dish.
Notes
- For a different flavor, try adding balsamic vinegar before roasting.
- These onions pair well with grilled meats and can be used as a topping for burgers.
